This wonderful vegan dish is a great alternate to Black Beans and Rice. It can be served hot or cold.  It can be a side dish or it would make a healthy and nutritious main course.
It is high in fiber and protein yet, the slightly nutty flavor of the Quinoa and the little bit of spice make this taste like an extravagant fare rather than wholesome dish.
