Alot of being a Vegan is taking some of your favorite recipes and figure out how to make it without meat. Carpaccio is a favorite of mine and since it is usually made with thinly sliced marinated beef, that was the dilema. The first thing that came to mind when trying to veganize it was Portobello Mushrooms.

It turned out that it was a perfect substitution and with the Miso-Marinate I might even like this version better than traditional Carpaccio.
